It's Takana (Japanese peppery green) Oshi Sushi.
And this is Mapo Aubergine (Mapo Nasu).
This is Chinese dish and I used to learn Chinese cooking in Tokyo.
Some hidden favour are You-chi (豆豉) which is known as fermented black beans and loads of Freshly grounded Szechuan peppercorn powder (花椒粉).
I'm gonna make a recipe of this hearty gutty meal in a couple of days.
