The red broth which contains plenty of chilli and Chinese herbs is extremely spicy and tangy but incredibly flavourful!

The other day when was a rainy day, I was in my kitchen for making Japanese Kimchi.
Kimchi, a traditional fermented Korean side dish made of vegetables with a variety of seasoning is fairly popular in Japan as well.
I added more Seaweed flavour for tuning a taste to my favourite taste; more milder chilli but more deeper.

They encouraged me to create the image of "Japanese Christmas" on a table.
Miso-glazed Monkfish, Edamame & watercress puree, Japanese tasty pickled beetroot & mooli.
