Early summer in Cornwall is purely beautiful and their live natures are inspirational for my cooking world.
That's a bunch of Wild Garlic which my son picked up and carried for me.
I arranged Pulled Pork with these fresh Wild Garlic with Japanese taste.
I wanted to express my feeling of full of the joys of spring!
My cooking method using the cast iron deep pan, this pulled pork is much more easier & quicker cooking.
Roast the marinated pork with Soy sauce, Sake and Honey with keeping the lid in the oven.
Sprinkle the chopped Wild Garlic for the last step and ready to eat!
Half roasted & half steamed pork by the heavy lid are incredibly succulent and flavourful.
What a wonderful time if I could make a picnic with you here too!

The summer has nearly come to beautiful Cornwall.
I felt like to cook very Japanese taste.
Then I marinated Scottish salmon into my original paste, Yuzu Miso paste, and grilled them wrapped with bamboo leaves in the oven.

Miso is effective in making protein tender by their fermentation, then these salmon is absolutely succulent and flavourful.
And I cooked Physalis dressing for the alongside vegetables.
They are perfectly matching with sweet, savoury & a little sour flavours.

I do like the time to cook Rillet through Confit.
Time passes quietly and patiently throughout this cooking, but whenever I cook this, I can touch the joy of "Cooking" into them.
This week, somehow I couldn't stop to cook seafood with confit's method.
I chose Monkfish & Cod which are different texture & flavour with each other.
Cooked two flavour: plain and herbal (Dill & Caper) rillets.
Just for my children who are not keen to have strong herbal dishes.
Perfect combination with rich fatty rillets, fresh tomato & samphire on hot toast.
That's the suitable dish for perfectly chilled white wine.
Cornwall is getting to be more summery and more matching with these joyful dish.
Yesterday, 5th May, was the Children's Day in Japan.
Children are celebrated and happiness is wished upon them.
The Children's Day was originally called Tango no Sekku (端午の節句) and also was a festival for only boys but nowadays this is for both boys and girls.
On Children’s Day, families fly huge carp-shaped streamers called Koinobori(鯉のぼり) outside their house. The Koi (carp) symbolizes strength and success from a Chinese legend – a carp swam upstream to become a dragon.
I have two boys, hence I decided to cook these children's platter which were packed with their favourite meals.
