To be frank, the spring rolls are one of my most favourite dish in the Chinese cuisine.
Very these days, I found the fresh spring roll sheets in the local store.
How exciting! I danced in front of the sheets.
Absolutely I wrapped my favourite fillings in them.
To enjoy the crispy & crunchy skins and also juicy fillings are bliss!
I really thank my health to enjoy my cookings.
The bouquet which I found in the nearest shop was too beautiful to stop grabbing them (Actually they were half price!)
I rushed to cook the dinner for sharing them with my poorly friends.

Such a lazy morning while the Easter bank holidays, Spaghetti is the perfect brunch for us.
Spaghetti aglio e olio Japanese style.
I secretly add the seaweed essence into them, that's effective for the deeper flavour.

I found these beautiful Live scallops at the local fish monger.
I cleaned them at my kitchen.
They are enough fresh to eat in raw, then I slightly grilled them with soy sauce & butter.
What a juicy & tender meat!
Meanwhile I made Sushi Cakes with Seafood Sticks and Vegan Sushi as well.
Sushi with Pickled vegetables & Grilled with sweet soy sauce Sushi.
Soy milk ice cream with Agar Jelly.
During my cooking, this stunning freesia inspired me with amazing sweet smell.
I braised pork joint which I marinated in soy sauce, sake and sugar for over night.
This is the Japanese Chashu (焼豚).
I braised the pork at low temperature, and so my Chashu is really juicy, tender, and flavourful. (I'll serve them to you at my Ramen & Gyoza Night)
On that day I arranged the dinner style to "Build your own".
Pick up your favourite one and build your own taste.
Spicy bean sprout and Mooli Miso Soup etc.
The sky which I looked up was heavenly beautiful.
Spring has come to Cornwall, but this was the day when it was still chilly.
On such a day I cooked Japanese miso pork stew and pork dumplings.
The hot hearty stew and crispy dumpling with hot spicy sauce.
This was the perfect way to warm up for my family.
I really appreciated these grace of the nature.

On the busier day, I choose fresh mackerel from the local fish monger.
Salt-Grilled Mackerel served with grated mooli.
This is quite classical Japanese home dish.
Remove the gut and smear the salt over the fish, and grill it.
It took the time only 15 minutes.
Salt removes the fishy smell, and only the nice taste remains into the fish.
Healthy and tasty.

We enjoyed a rillettes which made from the leftover of the confit of last evening.
Thanks goodness, all my family loved this easy dish.

I cooked "Confit de poulet" for ages.
Because wild rosemary in may garden looked so beautiful in the spring sun shine.
Their fresh and flavourful smell inspired me this dishes.
Seasoned chicken with many flavours for over night.
I really love this quiet time. Just the sound of simmering.
I can't resist confit whenever I found this menu in any restaurants.
But especially I love MY confit which my dearest cooking teacher taught me in the past..
