Today is the last day of January.
Where has time gone?
Anyway we have enjoyed every single moments as our new experiences in our life throughout this month.
One of them, my elder son had his first school trip and I attended that as a parents volunteer.
That's my absolute pleasure to see your own daily figure, my beloved son, there!!
Thank you for giving me this kind of opportunity to feel a joy of parents.
After I sorted out some of works after this trip, I rushed into the kitchen and cooked a dinner for my family as always.
The day before of this event's day, I luckily got a really fresh cod roe from my reliable local fish monger, then I cooked these fresh roe into taramasalata in advance.
Then on this day, just simply I boiled linguine and tossed it with taramasalata, mushrooms, onion, garlic butter, cream and bit white soy sauce in a pan quickly.
And served with lightly grilled fresh Cornish mackerel (鯖の塩焼き）as well.
My boys loved these taste.
I cherished my boys' smiles on that day as usual.

Freshest local caught wrasse (caught at just the last night!), Tempura Physalis with Matcha (green tea) sea salt.

I don't like the cold (at all!), but I can't stop loving winter season in Cornwall because their stunning nature gives me pure feelings & makes me calm.
After our busy weekend, I chose our dinner menu for the sake of charging boys' stamina for busy whole this week.
Pork Gyoza (dumpling) and Kale, Red slaw Asian Salad.
Dumplings are composed of proteins, vegetables and carbohydrate.
SO they are mostly perfect balanced dish!
And why not, my boys love them, so this is safe bet for me :)

Anyway some bugs apparently come around in Cornwall, take care of yourselves.
We feel really blessed with such beautiful, crisp winter days here in Cornwall.
For keeping us warm and healthy, I chose a soup that contains a high good nutritions based on Japanese Dashi.
I lightly charred fresh Cornish seafoods with Echire butter in advance, and then mixed them with a Japanese Dashi (made of Kelp and Smoked dried bonito) soup at the last minute.
The seafood that are not heated too much are so tender and clean!
By sprinkling a Japanese Chilli Oil what I made, more deep flavour does burst in my mouth.
Perfect dish for a winter dinner.

After such a huge fun time, somehow we are always likely to have an energetic food.
What that I chose for my family was "Charred Cornish Rack of Lamb, Japanese Chilli" & "Vegetable stew in Japanese Dashi".
Luckily I have met a really great local meat supplier @Brian Etherington Meat and they gave me a freshest lamb.
I can't express enough this inspired me so much.
To be honest, I haven't enjoyed such a freshest, cleanest lamb meat flavour ever.
So what I needed for seasoning were just sea salt, Panko, and Japanese Chilli oil.
Just them but so delightful!

That is so unique but totally addictive deliciousness.
Whenever I made this curry, I simmer much more of them and arrange the curry sauce for various styles of dish.
The other day I couldn't resist the temptation of Pork Katsu (Cutlet) Curry as I luckily found a really fresh pork loin at a local shop.
Pork Katsu Curry, Mooli Salad and Tofu Strawberry Ice Cream.
Perfect combination with crispy succlent cutlet and dense curry sauce.
And this Tofu Strawberry Ice cream contains neither any dairy nor Sugar, but all natural sweetness of fruite made us smile & happy.
Next day, I made Honey Mustard Teriyaki Salmon and put the curry sauce alongside in a plate.
This is so simple cooking, after frying a salmon fillet, I just only caramelised Whole grain mustard, Soy sauce, Honey and White wine together.
That's easy isn't it!
I would like to recommend you to use Noilly Prat instead of ordinary white wine.

I made up some of traditional new year foods for our New Year Festive this year as usual.
The dishes that compose osechi each have a wishing meaning for the new year.
Oh, I have so much to tell you!!!
Anyway, first of all, we wish you a happy, healthy year!
After we indulged in all traditional Japanese food in New Year festive, we are always desparate for more thick taste like dairy & garlicky!
Then what I chose to make was "Teriyaki Chicken & Margherita Pizza" with home made Chilli Oils and garlic oil.
I bought the base of pizza from a shop and just put some toppings over there.
Teriyaki, children love these sweet & savoury taste.
Of course my boys do so!!
We all were happy with these healthy & bespoke taste.

Yes, especially festive time like Christmas!
I had spent time with only my family in the UK and thankfully had really quality time together.
Even after finishing Christmas, we can not stop festive mood because our Japanese culture traditionally celebrate more New Year festive than Christmas.
On the night of New Year Eve, I made special Japanese tapas for my family.
That was Sushi, Sashimi & Tempura for my family.
We Japanese make these handy size sushi for a special occation.
In other words, they are a match for celebrating New Year for us.
Prawn Tempura Nibble Style
And just before 0.00am, we eat Tempura Soba (noodle) calls Toshikoshi Soba for celebrating, or "noodle soup which is believed to carry you safely into the New Year."
This is the very traditional custom.
To be honest, I wish I could put my feet up while such a festive time, but succeeding our culture to descendant is our inportant responsibility, I think.
